Coconut Cake, help.

I lost my recipe but found one I think was the same. I made it for Thanksgiving. Short version of recipe is box cake, add coconut. Bake, then poke holes in cake and pour sweetened liquid over top. After it is cool cover in cool whip & refrigerate. OK, here's the problem....after getting cold the cake seemed heavy instead of moist. One day I made sandwiches & cut our cake at the same time. After the cake sat out it seemed "normal." OK, so just take cake out, let it sit awhile & then eat it. Simple BUT I don't think my other recipe acted this way. Any suggestions? Thanks for your help.

Which kind of campground?

We are recently retired. We've been staying in Forest Service, National & State parks. We've enjoyed the great outdoors and this is my DH's "cup of tea", but I'd like alittle more inter action with other campers. Other than the Hi's and waves as fellow campers pass by we've only encountered a couple people who drop in and chat. SO are there any affordable campgrounds that also offer activities along with the great outdoors?

We stayed in a Forest Service campground over the weekend. We saw lots of trash on the trails, next to the dump station, even at the campsites. I wondered who we would contact asking about free camping for trash pick up. Has anyone done this? How many hours a day DO YOU think would be fair for a free night of camping? Rates are $15.00 a night. Thank you.

Thank you for all the replies BUT I am shocked at how many think soggy crust is ok. In answer too questions asked, the pudding was the cook kind which I did in the microwave. The meringue was high & fluffy and sealed to the edge of the crust. It came out of the oven beautiful. As it cooled the meringue shrank & started weeping. It was so soggy today I couldn't eat it. :(

HELP, Soggy Lemon Meringue Pie Crust

:( I used Jello pudding in the box, made in microwave. Followed the directions on the box for Meringue. I used a gramham cracker crust. Can anyone tell me what I did wrong??? Thank you.

RATS!!! Thank you. I don't know the towing capicity but apparently y'all have a good idea. The Santa Fe is my Mom's & I never thought much about that make of car but it's a very comfortable drive & ride. I guess we'll have to rethink this. Thank you!

Class B owner thinking about TT, please help.

We have a 1990 Roadtrek in great shape. We've been traveling in it for 2 years, our longest trip being 6 weeks. Although we are retired my 77 yr old Mother lives with us so we can't travel as far as we'd like. Someday we'd like to travel at least 6 months out of the year. We always thought we wanted to jump up to a Class C BUT lately I've been wondering if we'd be happier with a TT. I don't like having to unhook everything to site see in the B but if we used our Hyundi Santa Fe to pull a TT, we'd have a vechicle to site see with. Any advice????

I had left over London Broil the other night. I cut it up in small cubes, added cup of water, 1 small cubed onion and simmered until tender. I then added 2 cans of Triple Succotash (tomatoes, corn, butter beans), 1 additional can of niblet corn (I love corn), any leftover veggies in fridge & cubed potatoes. You'll have a wonderful vegtable soup.

Boiled dinner. Bring ham bone to a boil, add cabbage, potatoes, onions & carrots, simmer until veggies are tender. Make cornbread, yumm, yumm!!!

I cook mostly from scratch also but do use a few convience foods. We have a class B so heres what we start out with. Homemade potato salad,baked beans in a can, beef hotdogs, 1 or 2 kinds of deli meat. That takes care of lunch for a few days. For dinner-Boxed Alfredo Pasta, cook in micro, add prepacked chicken & broccoli; beef polish sausage cooked in electric skillet with cabbage, onions, potatoes & carrots, vacumm packed ham slice w/fresh baked yams & canned veggie.Even with my teeny tiny freezer I can put 2 hamburger patties, 2 boneless chicken breasts & 2 New York Strips. I always have some kind of dinner I cooked at home, usually "goulash", my "G" is browned hamburger, onions, tomatoes, tomato sauce & macaroni. The longest trip we've done is 6 weeks.
