This is one of my favorite camping / crock pot recipes.
Beef & Gravy
2 to 3 pounds of stew meat.
1 can beef broth
1 pkg. Knorr leek onion soup
1 tsp minced garlic
1 pkg McCormick Brown Gravy Mix
1/2 tsp Kitchen Bouquet
3 tablespoons flour
1/2 cup cold water
1 small bay leaf; Optional.
Add beef broth, soup mix, gravy mix and garlic to crock pot. After blending initial ingredients, add meat and cook on high for 1 hour and then lower to low for a remain 5 hours. Remove bay leaf. When meat is tender, gravy can be thickened by mixing flour, Kitchen Bouquet and cold water and adding to the crock pot. Turn heat back up to high for another 30 minutes and then serve over a mountain of your favorite mashed potatoes. (When camping, I use the instant garlic mashed potatoes)

Here is a website to check out. This lady spent every day in 2008 using her crockpot. There are some really great recipes. As previously mentioned, don't forget the crockpot liners!

we make pork chops and stuffing in ours.
season pork chops
mix stuffing (we have used both stove top and "other stuffing")\
layer in crock pot
cook for several hours.
Pork chops come out so tender

Thanks to all who have replied. Sounds like some great recipes and websites for me to check on. I love my crock pot and use it a lot at home, but never in the RV yet. We're still figuring everything out so I thought it would be fun to make something special this week. Appreciate all the help is making that happen.

My quick and easy favorite is Pound Stew:
One pound of each: carrots, potatoes, onions, tomatoes (15oz. can), boneless chicken breast or thighs.
One cup chicken broth or boullion.
1/2 cup white wine (optional)
Chop vegetables in chunks, about 3/4 inch. You can chop the chicken or shred later when all is cooked. Mix all in crockpot. Add broth and wine, add water to just cover all.
Cook on high for five hours, or low for eight hours. Thicken with one tablespoon of flour in 1/2 cup of water.
Believe me, anything you make will taste wonderful after a day of biking!

Sorry, I forgot who originally posted it here, but my picky daughter calls this "OMG roast".... ...She calls it that because her first bite after tasting it she said, "OH MY GOSH" this is so good....
Roast
1 dry package of Italian dressing mix (I use Good Seasons garlic and herb)
1 dry package of Hidden Valley Ranch dressing mix
1 dry package of brown gravy mix (I use onion gravy mix instead)
Put roast in crockpot and add dry ingredients on top...I also add 1/2 cup of water but don't remember if original poster does....Cook on low until roast is tender.....YUM!

I was just going to post this one! You beat me to it 
This is a delicous roast recipe. It's called 3 envelope roast
I like to brown the roast first but it's not necessary.
I have also just dumped the contents of the 3 envelopes
on to the roast I prefer to mix them all into a cup of water and then add that to the roast. It makes the most delicous gravy. Even my brother raved about it!

I highly recommend checking them out.
A great dessert recipe is "triple chocolate mess":
Crock Pot Triple Chocolate Mess
1 package chocolate cake mix
1 pint sour cream
1 small package instant chocolate pudding
1 small bag chocolate chips
3/4 cup oil
4 eggs
1 cup water
Spray crockpot with non-stick spray. Mix all ingredients. Pour into crockpot
Cook on low for 4-5 hours.
Serve in a bowl with ice cream.
Don't be surprised when this turns out a little moist and gooey in the middle. It's not your traditional type of cake.

I used the seasoning packets above in ground chuck for hamburgers. OH MY GOODNESS !!! Best hamburgers we have ever eaten. Then the next day I bought a large pork tenderloin, cut it in half and used the three more seasoning packets as a dry rub on the tenderloin and cooked it in the electric skillet.
YUM!! YUM!!

Edited to add: I cut the pork tenderloin in half so both halves would fit in the electric skillet. I didn't want you to think I used that much seasoning on half a tenderloin.

I got the book "Not your Mother's crockpot book" or something like that. There's pretty good eats in there. The Moroccan Chicken is particularly good.

Last trip out we made a chuck roast with carrots, onions & potatoes. I used a can of beef broth, a package of McCormicks Pot Roast mix. Mixed the broth and seasoning mix, put veggies on the bottom, covered with meat and poured liquid over the top. We fished all day and when we came back to camp, the aroma was out off this world. It knocked my socks off!
