What is your favorite Fall/Winter RV meal?

Where we live it’s already “winter.” Snow has fallen several times and Fall seems to have . . . whoosh. . . come and gone.

We are planning a trip (south) but, it might still be in the thirties at night and hight sixties during the day. Perhaps not BBQ weather?

What do you all cook at this time of the year and do you do it in our outside of the RV?

We like stews or chili with cornbread muffins; or chicken pot pies;
All prepared inside, but hot chocolate to sip outside!

We like chicken stew chili beans or beef or pork roast all done in a dutch oven.

ANY weather is barbecue weather! Somehow a barbecued T-bone seems to taste better when I'm standing in two feet of snow. We do slow down using the grill in the winter and it only gets used 2-3 times a week. I also barbecue a turkey, ham, or roast for holidays. Although, I also like homemade chili.

Chicken soup. A few boneless chicked breasts along with all the extra veggies and potatoes you can round up and a good dose of various spices, whatever is available at hand. A few cups of water in the pressure cooker for 45 minutes or so. Eat with a few buttered whole-wheat tortillas.

Or how about taco soup?

1 pkg. ground turkey
2 cans pinto beans (not ranch style)
1 large can white hominy
1 can green enchilada sauce
2 cans rotel tomatoes
1 pkg. taco seasoning
1 pkg. ranch dressing
2 cups water
1 diced onion
1 tbs. garlic

Saute meat and onion. Add rest. Simmer about an hour.

This is my personal adaptation of an ol'blue recipe and is a wonderful comfort food. While camping, I use some cheesey garlic instant mashed potatoes.

Beef & Gravy

2 to 3 pounds of stew meat.
1 can beef broth
1 pkg. Knorr leek onion soup
1 tsp minced garlic
1 pkg McCormick Brown Gravy Mix
1/2 tsp Kitchen Bouquet
3 tablespoons flour
1/2 cup cold water
1 small bay leaf; Optional.

Add beef broth, soup mix, gravy mix and garlic to crock pot. After blending initial ingredients, add meat and cook on high for 1 hour and then lower to low for a remain 5 hours. Remove bay leaf. When meat is tender, gravy can be thickened by mixing flour, Kitchen Bouquet and cold water and adding to the crock pot. Turn heat back up to high for another 30 minutes and then serve over a mountain of your favorite mashed potatoes.

I have a variation of the already posted Taco Soup that I fix in the crock pot. I also have an easy clam chowder for the crock pot I like to make and stew..in the crock pot. So I guess my answer would be almost anything in the crock pot and yes I cook it in the RV.
