I like to have Stove Top Cornbread Stuffing for breakfast with eggs. Stuffing is fast and easy with a microwave and really goes good with eggs, bacon or ham or sausage! Anyone one else discover this?

Glad you like it. I tried the stove top stuffing a long time ago and have never used it again. I would like some of the eggs, bacon, ham, or sausage (ever get up to Bradly's Country store, just north of Tallahassee?) They used to have some really good country sausage and bacon, but alas, I have not been there in many years due to the distance now.

this is a good breakfast recipe:
1 tube bulk breakfast sausage
1 can cream of mushroom soup
1 small bag stuffing (I use Pepperidge Farm)

Mix these 3 ingredients together and put in a loaf pan (or double recipe and place in a bundt or tube pan)

Bake at 350 til done (like a meatloaf)

Slice and serve warm.

If you use a bundt pan you can fill the center with scrambled eggs or potatoes.

it's part of our Christmas morning brunch. I make an egg strata, posh potatoes, a baked stuffed french toast, and the sausage stuffing loaf. They all bake while we're opening gifts, and just about when we're done, the aroma of breakfast starts to waft in.
A few years ago I said I was going to do something else for breakfast, but the kids had a fit. I created a monster that just won't go away!

I use leftover homemade stuffing, but I like to make it into patties and lightly brown it to serve at breakfast.

No I hadn't. I think it would be a great way to use up extra Thankgiving Stuffing too. Thank you for posting your idea!

Another good way to use leftover stuffing. Make a ring in your frying pan and brown one side, carefully flip it over and crack a couple eggs in the middle.

WOW, I never thought of using stuffing (boxed or homemade) like this!
All the recipes sound really good, and I will certainly give them a try. Thanks so much for the great ideas.
