Here is an easy but recipe. It may be easy but, it is a crowd pleaser.

Taco Salad

1 Head of lettuce chopped and spin dry
1 Medium onion chopped
3 Medium tomatoes. Remove seeds and juice and chop
2 Cans of red beans rinsed and spin dry
½ bag of Taco chips or to taste
1 bottle of creamy Italian dressing
2 cups of shredded cheddar cheese

Leave in refrigerator overnight or as long as possible

Mix well prior to serving.

And here is another one. It came from Weight Watchers, but eating it you will never know it is low calorie.

I am FAT and love it.

Sparkling Fruit

1 bag frozen peaches
1 bag frozen cherries/berries
1 can strained lite chunk fruit cocktain
1 can strained lite chunk pineapple
1 can strained lite sliced pears

Put together in a bowl and let the frozen fruit thaw.

When thawed, mix in one (1) packet sugar free Koolaid tropical punch

Let sit overnight if possible.

Before serving, put two (2) sliced bananas in it.

We had this as an appetizer once. It was great.
Breakfast sausage links
maraschino cherries
pineapple chunks
maple syrup
Saute breakfast sausage links, cool somewhat, and slice inso 1 inch segments. Put back in frying pan, add drained fruit, and enough maple syrup to coat, and heat up. Serve with toothpicks.
Sounds wierd, but it was really good.


I also have made a kielbasa stir fry, with chunked kielbasa, pineapple chunks, cherries, and 1 inch slices of carrots, onions, and red peppers. Stir fry a bit and add a bottle of sweet and sour or General Tso sauce. Serve over rice.

Or kielbasa and potatoes- make like home fries- sliced potatoes, onions, and thin sliced kielbasa.

you know, Deviled Eggs are such an old standby, but they are always the first thing gone. And you know with 10 hens in the back yard, I'll be the one bringing them!
There are so many variations on deviled eggs, like using only half the yolks and mixing in an equal part of diced ham (like ham salad)

OK here's another thing I like to do- a big tray of baked stuffed potatoes. You can do the usual twice baked, but if you want to include meat, stuff with chili and top with cheddar, and have sour cream on the side and maybe some chopped green onions.

here's something that goes first at my daughter's Crew picnics- a tray of meatballs, Italian sausage, and peppers, with marinara sauce. If you are too busy you could buy pre made meatballs (although I think homemade are better) You can provide some small rolls, too- like mini grinder rolls that would hold, say, 2 meatballs.

baked stuffed peppers! Nobody else in my faily likes them so i would choose those first in a buffet line!

Bakes stuffed mushrooms, so many ways to fix. Wtih stuffing, seafood, italian sausage, or just herbed cream cheese and cracker crumb topping.

You normally take enough to feed your family. If everyone does this, there will be enough for most people to sample your dish. You're not trying to feed everyone, just providing one of many samples.

I have been to many potlucks. The "most yummy" stuff always disappears first, but there are ALWAYS leftovers and plenty of food to eat if everyone contributes equally.

It sounds like you have the type of dishes worked out, just alternate.

I think what part of my problem is that we have a potluck once a month at church and then I try to take at least 2 dishes (sometimes 3!), but I know I can't do that 4 or 5 times in one week. Just have to remember I'm not trying to feed everyone!!! And I know no one will go away hungry!

Great tips and recipes everyone! You helped me remember one with kraut & frozen meatballs...I got it at work. I'll look it up and share with y'all!

I just made this a few nights ago and it was great! Plus, it couldn't be easier.

Sweet and Sour Chicken in the crockpot
8 chicken thighs tossed in a couple tbsp flour
1/3 cup barbeque sauce
1/3 cup orange marmalade
2 tbsp soy sauce
1 tbsp grated ginger (or 1 tsp powedered)
Put chicken into crock pot. Mix all remaining ingredients and pour over the chicken. Mix well. Cook on low for appox 5 hours.
