I have Shun and Wustof are my faverate, the Shun has a 7" blade and the the Wustof has the 8 inch blade, I also have a Hinkle, and many other great knives and I purchased a set of Furi for the wife she is not alowed to use any of my knives all are razor sharp and want them to stay that way.

Look at Victorinox by Forschner, model 40811. Good size handle. I believe this is a favorite of Americas Best Kitchens; and ours as well. We bought ours from Cutlery and More.com.

I agree with the 8" chef's or Sankotu. Most people don't give much thought to the handle. Try to get a solid handle and stay away from ones with rivets. The holes in the handles are nothing but breeding ground for bacteria.

Wustof Classic Trident. Any size or type you like. I got my first in Germany about 25 years ago and am still using it. Added others and now have 2 sets, one for the RV and one for the house.

I'll second the vote for Victorinox by Forschner. I have these knives at home and a second set in the camper.
8" chiefs knife #40520
7" santoku # 41529
8" cimetar breaking butcher knife #40537
(I LOVE this knife and have been using the same knife for just about 30 years.)
If you can find the little birds beak paring knife pick up 4 or 5 .... they are wonderful!
I have bought (on line) from the same man for several years and if you are interested in his contact information just send me a PM.
I also have cutco knives (a drawer full) but find I only use the bread knife out of that set.

Check out your local restaurant supply company, not the ones that sell food items but instead sell the equipment. I've got a bazallion knives but these have been the best, and are by far less expensive than "name" brands.

When I graduated from culinary school my sister gave me a chinese cleaver, I use that most often at home. In the trailer I use an 8" chefs knife. Both are 30 years old.

40 year old wood handle 7" chefs knife, and a couple Mundial 7.5" Chef's as they are the closest I could find to the wood handled favorite. I do like my Kuhn paring knife when doing a lot of apples or potatoes. I found the Mundial knives at Tuesday Morning for a good price. Mundial has always been my favorite scissor brand, and the knives seem good as well.
