Too bad, you are going to miss some fantastic views. You would be better off to stay on the Interstates, I don't recall any steep overhangs on them.

most any interstate highway will fill your needs. I prefer taking the toad on the back roads myself.

I-10 from Arizona all the way across has no real mountains to speak of. Yeah, there's climbing and downhill sections, but nothing where she'll be overlooking down cliffs like in the Rockies or other places.Once you get east of Austin, there's no mountains at all. Same for the drive up from Austin to Oklahoma. The worst mountains you'll face will probably be just getting out of Washington and Oregon if you follow the coastline.

I second the interstates but they also go thru the mountains just not as steep a road as local roads. Suggest you get a copy of Mountain Directory West, www.mountaindirectory.com, that lists the steep roads in 11 western states.
Also, stay off any road that is listed as `scenic'!

I-5 to Bakersfield, then east on Hwy 58 to Mojave, then south and east from there. No more mountains, just hills.

I am currently making a similar trip. Left Seattle area on I90, moved to I82, than I84, to I15 and am currently traveling on I40 to Texas. Nothing exciting just some up and down hills but nothing scary on the Interstates. Biggest problem was Salt Lake City road construction and big rig accidents wasted 2.5 hours. Had a great stop in Prosser, Wa (wine country). I don't think you will have a problem.

I'd take I-90 to Buffalo WY, then I-25 south to avoid mountains.
