Did you fill the batteries to the bottom ring and not the top? Did you distilled water? Doubtful it matters with the amount of water added, but good to know for the future.
With excess water and a short they are likely compromised. At a bare minimum have they load tested.

Anyone have a comparison of GC2 and GC15? Apparently the GC15 is a little better quality?
Any reason to not use the GC2 and save some $?
OP Surge possibility - The first thing I installed was a PI HW50C. I've never had a surge since 2004 but numerous other pedestal problems.
OP It almost goes without saying that batteries need to be maintained.

Anothe AHA moment would be to post the A/C make/model. Have you checked the AC voltage with a heavy load like HW? You could also check voltage at the A/C. Low voltage is more common in the summer.
Otherwise as a non expert it sounds like the compressor.

The lower the voltage, the higher the current draw... Things are cooking somewhere! Maybe - resistive loads will have lower amps with lower voltage. Inductive loads like motors will have higher amps if they maintain the same horsepower.
Years ago I measured my A/C, lower voltage resulted in lower amps because the motor produced less HP. Several others reported the same.
Not suggesting low voltage is OK...:B

Hot summertime, A/Cs blasting, older park 92V. EMS had disconnected.
Quiz: 30A pedestal, 160V, hint open neutral - Why? Of course this happened at 10 PM.

10 ga wire on the panels results in a 1% voltage drop to the MPPT, very acceptable. Max current is 16.6A and 15.5A requires full sun which won't happen often.
House battery should not exceed 200A, so you could reduce CB size.

What is the reason for the DC-DC charger? Doesn't the alternator keep the chassis battery charged? Plus with the 2 batteries in parallel the voltage from solar should keep them both charged. But normally there will be an automatic connect of the 2 banks only when the engine is running, otherwise disconnected so that the chassis battery is always charged so that you can start and go.
Your solar has both 10 and 6 ga wires, should be the same. Wire size is based on the amps and series voltage. My panels for example are 9A and 36 Vmp with 62' of 10 ga wire and about 2% voltage loss. No need for the fuses on the MPPT input as the panels will not be damaged with a short. See the Imp panel spec. Use you panel specs, wire length and online wire calculator to determine voltage loss. 3% or less would be good. To be clear your panel wiring is not carrying 40A, but a lot less due to the higher voltage, MPPT converts the higher panel voltage power to lower voltage with more amps on the output. Posting panel specs will help.
The most critical wiring is from the MPPT output to the house battery and from the house battery to the inverter. Wires should be as short as possible and sized to handle the higher amp loads to minimize wiring voltage loss.
You show the red AC wire grounded which is OK if it's the neutral. In the US neither would be grounded and there would be a separate ground wire.

It’s not a RV so not subject to all the weird travel trailer “stuff” that virtually no one else cares about…ever, when actually using trailers.
Maybe we need the payload capacity of the tow vehicle before we can talk aboot his generator too?Yes tow vehicle information is also needed. Weight can be a very significant factor for liability, severe accidents do happen. I wouldn't ignore it but to each his own...

I was wondering about air flow. Recommend 2 or 3 of the large fans on one end, no other openings on that end. large single opening on the other end and no fans. Exhaust straight up through the top and Gen-Turi to cool it.
Also have you weighed the trailer? Looks like a lot of weight on the hitch.
