Ordered our 2019 Tiffin Wayfarer FW in 2018. Fantastic experience from the start.
I cannot speak from personal experience on the dealers listed above by Wayfarer. I have heard many positive and happy client reviews about:

Our experience has been you need to make a reservation near (within 25 miles) any popular Tourist destination. A few places we have been to seemed to be empty at 4 or 5pm. By 8pm, all spaces were full. Don't know if those folks had reservations or not.
Other than that, we have not had a problem.

For our June through August "Covid wilderness travels" , we found it rather easy to utilize grocery pick up services with a bit of advance planning.
Walmart is located almost everywhere and many major chains as well. They put the groceries in your RV on the steps.
With a bit of planning, we did not go into a grocery store the entire trip.

Postponed a 4 month trip to Alaska that we'd been planning for 5 years.
Enjoyed wilderness camping in Idaho, Montana and Wyoming instead.
It was pretty easy to distance from others in the RV, feel fortunate that we could do that.

I suggest you do a couple of practice runs at home before camping. Old hand mitts, A lid lifter and chimney starter are helpful.
Learn to balance the amount of heat on top can be tricky.
Start simple making sure you plan plenty of time and have enough charcoal briquettes or coals.
A Fruit Cobbler or garlic pull apart bread to start.

We have been thinking similar thoughts. Our plans to go this year had been 5 years in the making. Lots of business folks in Alaska are suffering. It felt wrong to ask for a refund.
When I called to cancel reservations for RV Parks and Excursions, 2 places said they were closing up the business, one was an RV Park in Canada
We have commitments to our grandkids for 2021. Our new plan is Alaska 2022.

RE: Are the campgrounds full in your area?

For us, the few last minute reservations we made (within a week) have been harder than usual for East coast travel but only for popular areas.
A few times we got our 3rd or 4th choice. Once we rerouted.
Covid Wilderness travel from June-August from FL to ND, WY, ID & Montana I made advance reservations. Headed east visiting family August til now with 3/4 advance reservations in CO to TN, NC & SC. The few gaps were filled but took far more effort than past years.
We've seen more full campgrounds than either of us can ever recall.

You might try the Tiffin Wayfarer Facebook page. A great resourceand really good folks. Some have had good experiences at a Tennessee dealership, can't remember the name.
We have a 2019 Wayfarer, ordered ours from a dealer in Jacksonville FL that I would NOT recommend.

RE: Hell's Canyon and region

We stayed at Woodhead CG & Hell's Canyon in July. Recommend both, we found shade sites when we booked online. We drove the scenic route. Hell's Canyon was a bit remote.
No boat tours this year, bathhouses were closed,if that matters.

Yes. When baking, you want to place the pan on the upper rack so it is higher. This allows the air to circulate better.
We have the High Pointe brand. It works well.

After owning a class C with poor workmanship, We purchased a Tiffin Wayfarer. Our best decision. The cost of quality workmanship is rather high. For us,it's been well worth the cost. Tiffin stands behind their product. Customer service like we not known in this industry. Good luck!

Also,suggest you take her to an RV show...when they start up again.
Shows have a variety of rigs, should help her realize the possibilities.
