Don't forget SPAM; it's shelf stable so it takes up no freezer or fridge space. It comes in low sodium/low-fat versions called SPAM-Lite. This is better than your Grandaddy's SPAM. It's good fried up in a pan for an easy OTR meal. Plenty of recipes for it too. RECIPES

Like others, when I smoke meats I generally smoke a lot, vacuum seal and pop into the micro wave for almost instant long smoked meals. I do baby back ribs, beef ribs, brisket, corned beef, country ribs, and a lot more. Even air fry chicken wings, seal & freeze. Ain't nothing better than after a long day of driving & setting up to pop a bag into the old microwave and having brisket like it just came off the smoker. Glad you mentioned vacuum sealing. We bought a food saver to vacuum seal meats on sale. We started using it for other items for our trips. The removal of excess air makes more room in the freezer. We initially bought a less expensive vacuum sealer but after the third session it stopped working. We bought Food Saver to replace it and it’s still going strong after 11 years.

It’s that time again.

I’m seeing a lot of RVs on the road. What’s on your road warrior playlists? I still have Linda Ronstadt’s “Willin’”. Eddie Rabbitt’s “Driving My Life Away”. Lately have been playing a lot of the newer country bands like Little Big Town. What makes the drive less dreary for you?

Next time you make a favorite meal, double the recipe and freeze it. If we’re in the mood for lasagne I’ll make 2. One to eat and one to freeze. Your soups idea is always good. If you want to dress up a chicken soup just bring it to a boil and drop in some frozen biscuits. Put a lid on it and let it simmer 20-25 minutes for chicken and dumplings. If I don’t have time to make my own frozen biscuit dough I pop into the store and pick up Mary Bs frozen biscuits. Most Wally Worlds have them.

RE: Tomato Pie

I had one of these at a restaurant in Scottsboro, Alabama. Carlile's. The mayo blends in with the cheese when it's baked. I never even knew it had mayo in it until I saw the recipe and I'm pretty good at being able to identify ingredients of any dish I'm eating. It was flavorful. Definitely a winner with herself and I. The crust was thin and crispy too. So I'm going to give it a go.

I will say this, I like the floorplan. It makes sense to me to have a galley layout with the door on the end. I would just flip it around so that the prow is behind the truck and the door to the kitchen is in the rear.

Tomato Pie

I found a Classic Southern Tomato Pie recipe with bacon in it. Of course. I'll have to try this when the tomatoes start appearing in the local farmer's market.

This--> Early on Saturday or Sunday is best. Any other time is hit or miss, depending on who forgets how to drive on that particular day. Weekdays wait till at least 10:30 -11:00 or prior to 6:00 AM. I try to time my travel through or around Atlanta before 10 am on Sunday morning. It's a much less congested road at that time.

Had a bit of a scare this morning. Was ready to put in my presbyopia contact lenses and saw red all over my left eye's right side. Appears a small bubble I've had there for years may have burst. No pain, looks yucky. I'm sending a photo every few hours to my eye doctor, and if it gets worse will go in much sooner than my current Wednesday appointment. Meanwhile, I'm back to reading glasses, which are just not as good as my contact lenses. Sigh. We'll keep you in our thoughts and prayers. Those are scary looking but you're on top of it I'm sure. We've had years where it seemed like it rained every single day. Every single day. Maddening.

That sounds like a great trip in August for all of you. We do shorter trips to state parks. Just for long enough to get a breather. We'll see a lot of state parks on our Wanderlust trip. We decided we have to pick a general direction because there's a siege on the reservations in all directions this year. Better make a few plans or we'll be left out in the parking lot.

We have an old fashioned bucket and motor rig. The grands love it. We only put the ice cream in the freezer for a couple of hours because we prefer soft serve. We use a similar custard recipe and flavor it different ways such as crushed candy bars, caramel morsels, etc.

Sore yes, but progress definitely. Czarny will be okay if he's anything like ours. Ours sleep until the weather suits them. We have the PC getting tuned up by our favorite maintenance guy. She's in great shape but just want to change out the fluids and making sure brakes and other things are in top working order. We're heading out in June for a month with no particular destination in mind. We're dubbing this trip our Wanderlust trip and will go wherever our hearts send us. The kids will check on us every night via cell phone. We'll tell them where we are and which direction we're headed the next day. Or whether we'll stay for awhile. No itinerary. No schedules. Just wandering.

Looks good. I read somewhere that you can make your own almond flour with blanched almonds in a food processor. Haven't tried it but probably will one day if I find myself wanting something to do.
