Candied Bacon Brittle

Candied Bacon Brittle 6 – Strips of Bacon 3 Tbsp.– Brown Sugar 3 Tbsp. – Maple Syrup Cayenne Pepper – to taste Cook Bacon over medium heat in a cast iron pan. After bacon begins to crisp up, add sugar, maple syrup and cayenne. Continue cooking (being careful not to burn) until bacon is crisp and caramelized. Remove from pan, let cool slightly and break into pieces.

Word of caution: some of those higher altitudes get snow early in September. It varies from year to year. You will want to take a weather app on your phone and keep an eye on conditions.

I know how exhausting it is when trying to support a loved one through illness. We manage but I'm glad you're there for Short Friend. Cats are quite personable and friendly. Those who don't like them must have had a bad experience with them when they were young.

Best wishes for a successful surgery. 'No' to the factory legs question. Maybe you can get something at the hardware store pipe section that will let you keep the factory legs intact? It's worthwhile to ask. Some of those old hardware store guys are pretty ingenious.

Sending prayers for Tall Friend. They have a bit of road ahead of them to be sure. The Spotacus in our family has grown into a very loving and sociable gentleman. He sits on the sofa and casually converses with whoever stops by their house. He thinks he's part of the conversation and that these folks have come to visit him apparently. :W

Unless you were being starved by the Engish, why would any human voluntarily eat Haggis? It is a dreadful visceral mixed with grains and has the appearance of dog wretch. LOL....doesn't tempt the palate? I'm pretty sure the modern commercial version is light on the innards, and not stuffed into a Sheeps colon. Probably closer to a generic hotdog on a larger scale. :B I'm sure the Chieftain of the Puddin' Race that resides in ye Old Country will put hair on anyone's chest. The American Chieftain we serve up in the USA is USA made and is very tasty. You can read about it here.

My hosts didn’t do any saining as they don’t have livestock. Many Christian families don’t do it because of the close association with old druidic practice. Probably why the practice has nearly died out.

It was the most successful Hogmanay yet. 138 people came and our friends' house was packed. Word has gotten round. Good thing they have a large home. There were 3 pipers there which means they stood on the deck playing with the windows open so guests can hear the music without needing ear plugs because of the decibel level. With all the food everyone ate their fill and then took some home. No one came empty handed. Fortunately there were 20 lbs of haggis or there would not have been enough. Four of us each brought a 5 pounder and everyone had a taste. But there were calls for more so it looks like we'll need to bring 40 lbs next year. All in all a very satisfying Hogmanay.

Those frozen meals never have enough protein or meat in it for me. I just up it with easy hacks such as adding cheese. Or throw nuts on top. Or of course add bacon. If I have to make do with a TV dinner then I doctor it to suit my needs. You can always add a side of peanut butter crackers to amp it.

Venison, Sweets, Whiskey and Ale was all I understood in your post. I need to get out more. :S You can do a search on the internet for the rest :W I had to learn about it all a few years ago and found a ton of info on the internet. Rampant Scotland is a good place to start.

A Month of Haggis (and other tasty bits)

On Tuesday we're celebrating Hogmanay and January 25th is Burns Night so I ordered two American haggis from Scottish Gourmet USA. One of these days I think I'll try making my own. Maybe for next year. Others will be providing the rest of the board with traditional Scottish fare: Cockaleekie SoupNeeps and tatties (Rutabaga and potatoes)Bannock breadVenison pies and Forfar BridiesRumbledethumpsSweets - Cranachan, Burrebrede (Scottish shortbread), Black Bun and Tipsy Laird TrifleWhisky and Ales Then we do it all again for Burns Supper on Burns Night. Since I have to arrive early with the haggis I'm never the first foot. That's usually left to a designated relative of the host.

Since I can't have sugar anymore, I adapted an old pumpkin chiffon pie recipe into a lovely rich mousse. If you want to go all normal, just change the sugar substitute back to sugar. It's been a huge hit around here for years now. Pumpkin Mousse 1 15 oz can cooked pumpkin 6 eggs 2 cups powdered monk fruit/erythritol blend 2 cups heavy cream 1 tsp salt 2 tsp ginger 1/2 tsp nutmeg 2 tsp cinnamon 4 Tbsp melted butter 2 Tbsp unflavored gelatin 1/2 cup cold water Bring eggs and cream to room temperature. Separate eggs. Mix the pumpkin, beaten egg yolks, 1 cup monk fruit/erythritol, and cream in a microwave safe 3 quart container. Microwave, stirring occasionally, about ten minutes. Add the salt, spices and butter, and continue to microwave, stirring occasionally, until the mixture is of custard consistency. While microwaving, dissolve the gelatin in cold water. When pumpkin mix reaches early custard consistency, add the gelatin, stirring it in thoroughly, then set aside to cool. Beat the egg whites until frothy, then add remaining cup of sweetener and beat until stiff peaks form. Fold into the lukewarm pumpkin custard. Place in serving bowl and top with fresh grated nutmeg. Let cool to room temperature, cover with plastic wrap, and refrigerate until ready to serve. Store leftovers in refrigerator. Optional: Make a ginger snap crust and pile mousse into the cooked crust, then refrigerate. Makes a very tall pie. Note: If you don't need to limit the glucose spike, you can use Splenda or Swerve powdered blend, both of which are more easily available than having to order the Lakanto monk fruit blend. This looks great. Gonna try it.

Walmart has a deodorizer called “Out”. It’s in the pet section. Works great for animal urine odors and just about any other odor.

RE: Group Camping Food Planning Question

I really like cooking with Dutch Ovens on a fire for a group. It is a focal point of camp, and an interesting process. Sometimes the neighbors want to stop by and learn about it. It is possible to cook anything in a Dutch Oven. No power needed. Oorah!
