I may research a ten foot aluminum jon with maybe a small outboard to fit in the truck bed.

How about this and a good sturdy ladder rack. You should be able to muscle that boat onto the rack and throw a 20 horse, gas tank, trolling motor in the bed. Louisiana has lots of redneck solutions in the bayous. See similar setups all the time.

I use a fly rod from a kayak, and I transport the kayak on top of a ladder rack system. My kayak is light enough for me to hoist it by myself. Fishing from it is a more intense core workout because you have to balance. I really enjoy the whole experience, though. It's a great way to learn a lake.
