Many years ago a co-worker left for a couple days and came home to a ruptured water heater and the associated damage it caused. He was surprised when I said if I'm gone for more than about 2 days I shut the water off.
That has evolved in that now if I'm gone camping for over two weeks I shut the refrigerator off, HVAC, unplug garage door opener, water heater and even the HVAC. A long time ago I would just have a friend come buy and check on the place every few days but as the trips moved up to 3 weeks I didn't want to bother them. I'm retired now so the trip can be as long or short as I want.
Curious in what others do.

It depends on how long I'm gone, but the most I do is shut off the well pump and water heater. Shutting down the heat is not at all a good idea for several months here in Vermont, and genearally the rest of the time it doesn't matter in as much as it wouldn't come on anyway. (I will turn the thermostat down, though; no need to keep an empty house at a comfortable room temperature.)
Fridge stays on because there's food there--in the freezer if not in the fridge proper. The garage door deadbolt lock is much stronger than the garage door opener, so I don't see any reason to unplug that.

I also shutoff the water pump, I unplug the water softener and turn off the water heater. If I can fit all the food in the RV, which does not happen often, I turn off the freezer and/or refrigerator. I am usually able to empty the upright freezer and turn it off/unplugged leaving the door open. In the winter, I turn the heat back.

Turn off the water, turn off the water heater, set the thermostat appropriately (60 in winter, 80 in summer) and disable garage door opener. Set exterior cameras to always armed and set alarm system to immediate trigger. Neighbors know how long I will be gone and keep an eye on the place.

For our summer camping trips most of the time I will shut off the boiler, A/C, main water valve to the house

Shut off all items pertaining to the house, concentrate on having good time while on the road.

If I am going for more than a day, I shut the main water line off and turn off the water heater breaker.
Prior to leaving for snow birding it's a whole different ball game and too much to write about here.

I see some are confused. The OP is talking about the sticks-n-bricks home. I've never shut anything off. I do set the AC higher or heat lower lower. As of now, my kids stay behind and keep an eye on the house.
I don't worry about any of that,
