You may well be able to get used but serviceable ones from an RV salvage yard.
Failing that, in your shoes I'd probably see about constructing a replacement part, say by cutting and drilling a piece of square aluminum stock. It doesn't look like too complicated of a piece: an angled end for the latch itself, a hole for the pull rod, and a hole for a cross-pin to catch the spring.
One could also 3D print (or have 3D printed) the bolt of the latch once the design is reproduced in a CAD or other 3D design program; printing in nylon is possible but somewhat tricky and requires a printer more capable than the basic models (and likley an enclosure). I'm not sure PLA or other more common 3D printed plastics would hold up all that well here.
