Newbie here. Due to freezing temps, I want to run the furnace on low but with all water drained, but not winterized yet. How do I run the furnace but not the hot water tank?

Turn off the water heater at your control panel or wherever your water heater on off switch is.

Is your water heater and furnace separate appliances? What year, make and model is your TT?

When you buy it ask during the walk thrugh. Easiest way is to turn off the switch. What kind of water heater is it?

WELCOME!!!
Water heater.....has separate controls. Gas On/Off switch inside (could have electric also inside or in outside compartment)
Brand/Model??
Furnace.....controlled by Thermostat on wall
Select HEAT
Turn temp set point UP to desired temperature
Fan comes on...slight delay/runs to purge combustion chamber then should hear 'Click, Click, Click' from ignitor/electrode then Flame comes on
Heats to temp set point...flame goes out...fan runs for cool down cycle then repeats when room temp drops 2-3* below thermostat set point
Brand/Model of Furnace and Thermostat would be helpful for us to help you
Also should post Year/Brand/Model of RV

You didn't answer if you drained your hot water heater. I'm suspecting you didn't. Keep that on as well if it's going to freeze for several days or drain it. You pull the plug - the anode rod - and let it drain to the outside. Look it up on YouTube.
