I have looked at alot of things on the internet and im still at a loss on whats the best option for me, i am thinking of just using my phone for hotspots and see how that works, but does anyone have a better idea for a solution?

A lot depends on how much data you consume. If your 8-hour-a-day experience is textual, you will be fine with a hotspot. If you experience lots of graphics or an interface like Citrix you will exceed your hotspot allotment quickly, unless you find a truly unlimited plan.
There is something special about camping in an RV.

Please do a search. You will find lots of threads discussing the same thing.
