I have a 4 door dometic 2-way fridge and it ice's up regularly, I checked the seals and they are good,, any ideas?

You might shut off the ice maker and switch to a small countertop ice maker, More ice, faster, and no release of moisture into the freezer.
Your "Frost Free' unit at home actually has a HEATER to melt the ice
But the RV Absorption unit does not.
I found when my Ice Maker failed...... The unit did not ice up nearly as much after I removed it and went to a counter top.
Home was where I park it. but alas the.
2005 Damon Intruder 377 Alas declared a total loss
after a semi "nicked" it. Still have the radios

We generally had to defrost every few months during full time use.

No icemaker (except for Frau Blücher) it collects about a 1/2" of snowy ice on the back wall of the freezer an the aluminum fins inside the fridge,,

Do the "dollar bill test" of both refrigerator and freezer gaskets. Should be reasonable resistance to pulling out the bill all the way around.
Verify that the refrigerator condensate drain either has a drip loop in it or a restrictor in the end. If neither, warm outside air will rise into the refrigerator.
