Have been looking for new ideas for bacon themed meals. Found this one and made it on Friday (without the mushrooms - didn't have any). It's a keeper.

Right tool for the job note:
The cook in the video used what looked like a coring tool for fruit to hollow out the onion. I used a classic grapefruit knife (with the bent tip and both sides serrated). It went much faster than the method in the video.
