I normally drink only 1 cup of coffee a day, in the morning. I've always ground the beans fresh, just before brewing. However, being in a hurry while shopping, I neglected to grab a bag of whole bean, and instead purchased a bag of already ground (Walmart brand, because it was cheaper. At home, I opened the bag and noticed it had virtually no coffee odor. I tried brewing 1 cup and afterwards threw the remaining bag of coffee in the garbage.
I was shopping again, and this time purchased whole bean coffee. I opened the bag, and also noticed a lack of coffee odor. Even after grinding, that luscious coffee smell was mostly absent. I made a cup this morning, and it was sort of acceptable, but not up to my expectations. Anyhow, I'm not about to throw the remaining beans away, at almost $10 a bag. If my perception of coffee quality continues, I'll just need to quit coffee drinking entirely until it improves, if ever. I won't drink the instant product since that tastes like poison to me. I do like tea, so maybe I'll eventually go that route, and save $$ to boot.

Whole bean coffee is no guarantee that it is fresh, and stored properly.

I wouldn't correlate WalMart brand to quality and would have realistic expectations. If you want good tasting coffee you have to buy good quality coffee. Maybe from a local shop.

You need to be careful about the brand you buy... Some coffee stories.
Best cup I ever had was a little Mexican place in Palmdale California..
Worst: Starbucks
For some years my daughter was part of an "After school" orchestra and they had coffee. And other refreshments at their rehearsals.. I took care of all that stuff (Filtered the water to the coffee pots. made sure we had pre-ground in stock) usually I made one 30 cup perk, and at the end practice some left.. Well one day (Rehearsal followed by performance) I hit the "Gourmet"coffee section of the local supermarket.. Whole bean ground to spec.
Made 3 pots that day (I brought a spare coffee maker)
Try house blend from The Unseen Bean (https://www.theunseenbean.com/) I have met the owner and tried a few of his blends. "House blend" is my favorite.
I got it ground (He can grind to order or whole bean)
Roasts on Monday
Ships on Tuesday
Arrives by Saturday (in my case)
Home was where I park it. but alas the.

Over the years I’ve noticed that expensive brands tend to stay on the store shelves longer and the cheaper house brands are restocked almost daily. Freshness is the key.

Want a good cup ?
Buy a bag of eight O'clock whole bean Dark Italian Espresso, and a bag of Eight O'clock Columbian Peaks. Mix them together in equal portions.
Each morning grind them together. I use seven spoon fulls for my wife and myself.
I like one and only one cup of coffee in the morning, and many moons ago when I gave up trying to find a bold brew, I started experimenting and this is what I came up with and to this day I have not found anything else as good.
I use a large jar with a air tight cover, for mixing and storing them and what won't fit in I just seal the bags until the jar is empty.

Couple of medical pros in my family know me and my coffee. For the last couple of years they have told me to smell my coffee first thing in the morning. Don't smell right? Grab the test kit, and not for coffee.
Traveling the country, packing what I know is good coffee, I learned the first step in making coffee is taste the water.

OP here. Good replies. I had my 2nd cup of fresh ground coffee this morning (the same batch of beans I previously complained about). It was just..OK, but not up to par. I think I'll brew my next batch "cowboy style", as I used to do when fulltime RVing. I didn't have a coffee machine then, as I wanted to save counter space.
If "cowboy style" doesn't improve the results, I may have to pony up another $10 or so for a different brand of whole bean product. This time, I'll pay closer attention to any dates on the bag, just in case I've been buying outdated stuff, although I'm usually date-conscious with most products I buy at the market.
