Wedgewood model T2150 oven troubleshhooting

Just tried the oven in my parked RV for the first time. Stovetop works great.

Pilot lights work fine and oven turns on (main heating element) when you twist the dial of the temperature control. However, after a minute or so the main element turns off. This is long before the oven comes up to temp.

With my basic knowledge of these devices it seems either the temperature probe in the oven, or, the thermostat control on the stovetop is bad. I HATE to think of changing out the thermostat because it looks like a bear of a job, given how the oven is built in.

Here's my question: I would like to bypass the thermostat and force the oven to be on all the time. If the3 oven stays on I would suspect the thermostat (or would I?).

But with two gas lines coming in to the thermostat, and no wires, I don't understand how to bypass the thermostat.

I would make sure the thermo-couple is adjusted properly.
