Anyone know what kind of pan this is? What do you cook with it?

Yup, it is one half of those cake pop making thingies. Just something that everyone in an rv needs to haul around

I have 10 of those....I use my fingers to separate eggs. Much easier quicker and they are always with me. Just wash before and after.

I see you found an answer. It looks to me like it may be a great way to separate a bunch of eggwhites from the yolks.

every abelskiver pan that I have seen have 7 cavities and are heavy cast iron.

A "holey" pan?

My first thought was Ebelskiver or Abelskiver pan but those do not have holes.

Maybe an egg poacher pan that sits inside another pan filled with water for the oven?
