IT'S PIE DAY!!!!!!!

Just found this out. I missed PIE DAY! Woe is me! So I'll have to make up for it.

Here's a listing of 10 pie recipes that I'm going to work my way through (except the peanut butter pie - family allergies).

That first one is being made tomorrow. Caramel sauce is the bacon duct tape of desserts. If the dessert is bland it can always be made better with caramel sauce :C

Saturday I'll make that Juicy Peach and Strawberry Crumb Pie for the grandkids coming over. Oh yeah.

When I'm done with that list I'll have to start making these 32 Pies That’ll Cure Your Winter Blues. I know some of those will end up in the dutch ovens.

Right now I’m doing savory side dish pies. That onion pie would go great with one of your abfab smoked meats.

Both those first two pies (caramel apple and the juicy peach) are gone! Finito! Zip zilch nada is left. Not a single crumb. Those two recipes are keepers :c I went ahead and made the peach early and it’s a good thing I did!

Now for the savory pies.

Vidalia Onion Pie
Yield: 8 servings

3 cups thinly sliced Vidalia onions
3 tablespoons butter, melted
1 (9-inch) prebaked deep-dish pie shell
2 eggs, beaten
3 tablespoons all-purpose flour
1/2 cup milk
1 1/2 cups sour cream
1 teaspoon kosher salt
4 slices bacon, crisply cooked and crumbled

Preheat oven to 325 degrees F.

In a medium saucepan, melt the butter over medium heat. Add the onions and saute until lightly browned.

Put the pie pan on a sheet pan. Line the bottom of pie crust with the onions.

In a small bowl, beat the eggs and the flour together to combine. Add the milk, sour cream and salt. Mix well and pour over the onions. Garnish with the bacon and bake until firm in the center, about 30 minutes. Transfer to a serving platter and serve.
