I was wondering if the eternabond tape should go over the trim or under the trim. Looks like previous owner hit a tree and the roof is needing repaired on the edge.

Over the trim, you are trying to stop leakage. If someone doesn't like the look, ask them which they would rather have, looks or delamination.

i put it over the trim
i don't put screw holes thru the EB, if i don't have too

Protection wise it's better over the trim. Aesthetics wise it's better under the trim which means you have to screw poking through the Eternabond.
